Gazpacho
- 3 cups tomato juice
- 2 tablespoons olive oil
- 2 tablespoons wine vinegar
- 1 clove garlic
- 2 medium tomatoes quartered
- 1 small cucumber, cut in pieces
- 1 small bell pepper, cut in pieces
- 3 medium stalks celery, sliced
- 1/4 medium onion, cut i pieces
- 4 sprigs parsley
- 2 slices of bread, torn in pieces
- 1 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 cup croutons
- cucumber slices
- Put 1 cup of the tomato juice, olive oil, wine vinegar, and garlic in a blender. Blend till garlic is finely chopped.
- Add half of tomato, cucumber, pepper, celery, onion, parsley, bread, salt and pepper to blender.
- Blend till pureed and transfer to tureen.
- Repeat with remaining ingredients.
- Cover and chill thoroughly.
- Served with croutons and cucumber slices.
