Apple Sausage Stuffing
- 1 1/2 lb. pork sausage (like Jimmy Dean's)
- 13 to 14 cups of day-old french bread, cubed with crusts trimmed
- 10 tablespoons (1 1/4 sticks) butter
- 2 cups green apples, peeled and finely chopped
- 1 1/2 cups onion, minced
- 1 cup celery, chopped fine
- 3/4 cup fresh parsley, chopped
- 1 1/2 tablespoon thyme
- 1 teaspoon salt
- freshly ground pepper
- Preheat oven to 300 degrees.
- Spread cubed french bread onto two large baking sheets; bake until browned and dry, stirring frequently (about 20 - 30 minutes.) Let cool. Transfer to large mixing bowl.
- Melt 2 tablespoons of butter in large skillet over medium high heat. Add sausage and cook until no longer pink, about 5-7 minutes, stirring and pressing with fork occasionally to break up lumps. Add sausage to bread using slotted spoon. Discard fat from skillet.
- Melt remaining butter in small skillet over low heat. Add apple, onion and celery and cook until vegetables begin to soften, 5-7 minutes, stirring occasionally. Stir in parsley and cook 2-3 more minutes. Add mixture to bread and toss gently. Blend in remaining ingredients. Taste and adjust seasoning. Cool completely, refrigerate before using (can be prepared 1 day ahead.)
- If baking separately from the Turkey, place in a casserole dish, cover with aluminum foil and bake in a 325 degree oven for about 45 min. Baste occasionally with chicken stock or turkey drippings to keep moist.
