No Crust Pumpkin Pie With Topping
- 1 15 oz can pumpkin
- 1 12 oz. can evaporated fat-free milk
- 3 egg whites or 1/2 c fat-free egg product
- 1/2 c sugar
- 1/2 c flour
- 1 1/2-2 tsp pumpkin pie spice
- 3/4 tsp baking powder
- 1/8 tsp salt
- 2 tsp grated orange peel
- Brown Sugar Topping:
- 1/4 c packed brown sugar
- 1/4 c quick-cooking oatmeal
- 1 tbsp marg, softened
- Prheat oven to 350. Spray 10" pie plate with cooking spray.
- Make Brown Sugar topping by mixing ingredients in small bowl.
- Place remaining ingredients in blender or food processor in order listed. Cover and blend until smooth. Pour into pie plate. Sprinkle with topping.
- Bake 50-55 min until knife inserted in center comes out clean. Cool 15 min. Refrigerate about 4 hrs until chilled
