Anita'S Coconut Cake

  1. cream butter & sugar in mixer, add yolks and beat well. Combine flour & baking soda. Combine buttermilk, vanilla, coconut. Add flour & buttermilk mixes to sugar/butter/eggs - combine well.
  2. Whip egg whites until stiff. Fold into batter 1/3 at a time.
  3. Pour batter into 3 8" greased & floured pans. Bake at 350 F, 20-25 mins. Let cool in pan 10 mins, remove from pan and cool well.
  4. For frosting, combine all ingredients in mixer.
