Anita'S Coconut Cake
- Cake:
- 1 c butter (2 sticks)
- 2 c sugar
- 5 egg whites
- 5 yolks
- 2 c flour
- 1 tsp baking soda
- 1 c buttermilk (make own with 1 c milk, 1 T white vinegar mixed, stand 5 mins)
- 1 tsp vanilla
- 1 small can coconut flakes (or 6 oz bagged flakes)
- Frosting:
- 8 oz cream cheese, softened
- 1/2 c butter (1 stick), soft
- 1 box (1 lb) powdered sugar
- 1 tsp vanilla
- cream butter & sugar in mixer, add yolks and beat well. Combine flour & baking soda. Combine buttermilk, vanilla, coconut. Add flour & buttermilk mixes to sugar/butter/eggs - combine well.
- Whip egg whites until stiff. Fold into batter 1/3 at a time.
- Pour batter into 3 8" greased & floured pans. Bake at 350 F, 20-25 mins. Let cool in pan 10 mins, remove from pan and cool well.
- For frosting, combine all ingredients in mixer.
