Cedar Plank-Grilled Salmon With Avocado-Orange Salsa
- 1 (15 x 6 1/2 x 3/8 inch) cedar grilling plank
- 1/4 cup maple syrup
- 2 TBP Cointreau
- 1 tsp grated orange rind
- 1/2 tsp salt, divided
- 1/4 tsp freshly ground black pepper, divided
- 6 (6ox) salmon filets (~1 inch thick)
- 1 cup orange sections (2 oranges)
- 3/4 cup diced peeled avocado (about 1 avocado)
- 1/4 cup fresh orange juice (about 1 orange)
- 2 TBP finely chopped red onion
- 2 TBP finely chopped red bell pepper
- 1 TBP finely chopped fresh chives
- 1 TBP fresh lime juice
- 1)immerse and soak plank in h20 1 hr
- 2) prep grill
- 3) combine syrup, cointreau, rind in small saucepan & bring to boil. Cook until reduced to 1/4cp (~3min). Sprinkle 1/4tsp salt 1/8tsp pepper over fish. brush fish with syrup mix.
- 4) place plank on grill rack and grill ~3min until lightly charred. Turn plank over and place fish on top. Cover & grill ~12 min
- 5) combine 1/4tsp salt, 1/8tsp pepper, orange sections, avo., orange juice, onion, bell, chives and lime juice in med. bowl to serve with fish.
