Mike Hargrove'S Sausage Egg Bake
- 1 lb sausage (breakfast, Italian, Chorizo, whatever)
- 9 eggs
- 3 C. milk
- 2 C. shredded cheddar (or other) cheese
- 1.5 t. dry mustard
- 1.5 t. salt
- dash of pepper
- about a half a loaf of italian or french bread torn or cut into bite-sized cubes, crust optional (I prefer to remove)
- Optional veggies (peppers, mushrooms, chives, spinach, etc.)
- 1. Brown sausage 3-5 minutes, crumbling as you go. Allow to cool.
- 2. In a large bowl beat eggs and milk. Add mustard, salt, pepper, and bread cubes. Mix well.
- 3. Fold in cheese and sausage. (You could also add other veggies, mushrooms, peppers, chives or spinach.)
- 4. Grease a 9 x 13 baking dish and pour in mixture. Cover and let stand in refrigerator overnight.
- 5. Uncover and bake at 350 for 60 minutes.
