Welcome Back Pasta
- Trader Joe's Lemon Papardelle Pasta
- TJ's Pork Sausage
- 1 Yellow, 1 Orange Bell Pepper
- 2 Small Yellow Onions
- 6 Cloves of Garlic, Skin on
- 1 Tsp Dried Thyme
- Can chopped Tomatoes
- 2 Smashed cloves of garlic
- 1 Tbs Dry Oregano
- 2 Tsp Dried Chile Flakes
- Goat cheese and Parmesan Cheese for Garnish
- Mix sausage, chunks of peppers, onions and garlic with a good glug of olive oil, kosher salt, and thyme in a baking dish. Bake at 375 for 40 mins or until sausage is done.
- Meanwhile, heat up large pan with olive oil and cook smashed garlic for 1 min. Add dry chile flakes and oregano and heat through. Add can of chopped tomatoes and mash up tomatoes with a potato masher. Leave garlic whole so it can be removed later, if preferred.
- Slice up sausage, peppers and onions and add to sauce. Add cooked pasta to sauce and cook 1 min longer.
- Garnish with a few crumbles of goat cheese and freshly grated parmesan.
