Welcome Back Pasta

  1. Mix sausage, chunks of peppers, onions and garlic with a good glug of olive oil, kosher salt, and thyme in a baking dish. Bake at 375 for 40 mins or until sausage is done.
  2. Meanwhile, heat up large pan with olive oil and cook smashed garlic for 1 min. Add dry chile flakes and oregano and heat through. Add can of chopped tomatoes and mash up tomatoes with a potato masher. Leave garlic whole so it can be removed later, if preferred.
  3. Slice up sausage, peppers and onions and add to sauce. Add cooked pasta to sauce and cook 1 min longer.
  4. Garnish with a few crumbles of goat cheese and freshly grated parmesan.
