Herb Rubbed Sirloin Tip Roast Ala John
- 1/2 tsp slightly crushed fennel seed
- 1 T paprika
- 1 T kosher salt
- 1 tsp garlic powder
- 1/2 tsp ground black pepper
- 1/2 tsp onion powder
- 1/2 tsp ground cayenne
- 1/2 tsp+ dried oregano
- 1/2 tsp dried thyme
- 2 T olive oil
- 1 (3 lb.) sirloin tip roast
- 1. In a small bowl, mix the fennel, paprika, kosher salt, garlic powder, black pepper, onion powder, cayenne, oregano, and thyme. Stir in the olive oil, and allow to sit for about 15 minutes.
- 2. Preheat oven to 350. Line a baking sheet with aluminum foil, enough to later wrap over the roast (see below).
- 3. Place the roast on the prepared baking sheet, and cover on all sides with the spice mixture.
- 4. Roast 1 hour in the preheated oven. Check it at 1 hour. It should be between 130-135u0b0. When it is, take it out of oven, wrap the foil around it, and let it sit for 15 minutes. The temperature will rise about 5-10 degrees.
