Apple Pie With Special Crust
- Crust:
- 1 1/2 cups pastry flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2 tablespoons sugar
- 4 ounces canola oil
- 2 ounces cold water
- Filling:
- 3 pounds Cortland apples
- 3/4 cup sugar
- 1 tablespoons cinnamon (to make cinnamon sugar)
- 2 tablespoons water or apple cider
- the juice of one lemon
- 1. Preheat the oven to 350oF. 15 minutes before baking.
- 2. Juice your lemon into a large bowl. Peel and cut the apples no thicker than 1/4 inch. Use a melon baller to dig out the core of the apples. Mix the apples with the lemon juice. Mix in the cinnamon sugar.
- 3. Stir into a medium bowl the flour, baking powder, salt and suar. Add the oil and the cold water to the dry ingredients. Mix into a soft dough.Divide and roll out the bottom crust onto the pie plate. Sprinkle the bottom crust with a little flour. Fill with the apple mixture. Roll out the top crust and add it. Pinch the edges and sprinkle with cinnomon. Prick the top of the crust with flour.
- 4. Bake for 45 minutes.
