Vegetable Chili
- .5 cup EVO
- 2 zucchini cut into .5 inch dice
- 2 onions cut into .5 inch dice
- 4 cloves of garlic, finely chopped
- 2 red bell pepers cut into .25 inch dice
- 1 can dices tomatoes
- 2 T chili powder
- 1T ground cumin
- 1T dried basil
- 1T dried Oregano
- 2t black pepper
- 1t salt
- 1t fennel seeds
- .5 cup chopped parsley
- 1 can chick-peas drained
- 1 can red kidney beans drained
- .5 cup chopped dill
- 2T lemon juice
- 1 cup sour cream for garnish
- 2 cups shredded Monterey Jack for garnish
- 4 scallions sliced for garnish
- 1 lb ground turkey (optional)
- brown turkey with 1T of chili powder - set aside
- saute zuch 5-7 min - set aside
- cook onions, garlic and peppers over low heat until wilted - 10 min
- place all ingredients in heavy pot
- add tomotoes,chili powder and spices and cook for 30 min
- Stir in beans, chickpeas and lemon juice cook for another 15 min
- Serve with dill, sour cream, mont jack and scallions
