English Fruit Teabread

  1. Put the dried fruit and sugar in a bowl.
  2. Pour the tea over; soak overnight.
  3. Grease and base-line a 2-pint loaf tin.
  4. The next day, add the egg, flour, baking powder and mixed spice to the fruit and tea mixture.
  5. Beat thoroughly with a wooden spoon until all ingredients are evenly combined.
  6. Spoon into the prepared tin; level the surface.
  7. Bake at 350u0b0 for about 1 1/4 hours, or until well risen and a skewer inserted in the center comes out clean. Turn out onto a wire rack to cool.
  8. Serve sliced and spread with butter.
  9. Serves 14.
