English Fruit Teabread
- 6 oz. raisins
- 4 oz. sultanas or golden raisins
- 2 oz. currants
- 6 oz. soft brown sugar
- 1/2 pt. strained cold black tea
- 1 egg, beaten
- 8 oz. plain whole meal flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. ground mixed spice
- Put the dried fruit and sugar in a bowl.
- Pour the tea over; soak overnight.
- Grease and base-line a 2-pint loaf tin.
- The next day, add the egg, flour, baking powder and mixed spice to the fruit and tea mixture.
- Beat thoroughly with a wooden spoon until all ingredients are evenly combined.
- Spoon into the prepared tin; level the surface.
- Bake at 350u0b0 for about 1 1/4 hours, or until well risen and a skewer inserted in the center comes out clean. Turn out onto a wire rack to cool.
- Serve sliced and spread with butter.
- Serves 14.
