Spicy Lamb Wraps And Lime Salad
- For the Wraps
- 4 Tortilla wraps
- 3 large Lamb Steaks (cut into bite size pieces)
- 2tbsp Extra Virgin Olive Oil
- 1 tsp fresh ginger (chopped fine)
- 3 garlic cloves (chopped fine)
- 2 tsp Harissa paste
- 12 fresh mint leaves
- For the Salad
- 12 small sweet Vittoria tomatoes cut into qaurters (on the vine)
- Crisp lettuce (shredded)
- One quarter Cucumber (diced)
- 2 sticks celery (diced)
- 1 small red onion (diced)
- 2 tsp Salt
- Juice of 1 Lime
- This will make 2 servings
- Prepare the salad by mixing the lettuce cucumber and celery and adding the salt. Put the onion and tomatoes on the top and pour the lime juice over the salad. (10 minutes)
- Warm the wraps and keep warm in tinfoil on a serving plate.
- Heat the olive oil in a frying pan and when hot add the ginger and garlic for about 1 minute. Then add the lamb and cook for 4 minutes followed by the Harissa paste. Cook until tender and then add the mint leaves for 1 minute. Pour into a serving dish.
- Each person can then fill a wrap with the lamb and salad.
