Nine Grain Bread
- 1 cup bread flour
- 1/2 cup whole wheat flour
- 2 packages active dry yeast
- 1 tsp brown sugar
- 2 1/2 cups warm water
- 2 Tbsp brown sugar
- 2 Tbsp cooking oil
- 2 tsp salt
- 1 cup nine-grain cereal (hot cereal)
- 1/4 cup chia seeds
- 1/4 cup flax seeds
- 3 1/2 cups bread flour
- 1. In a very large bowl, combine 1 cup bread flour, 1/2 cup whole wheat flour, yeast, 1 tsp brown sugar and 1 cup of the warm water. Beat with electric mixer until smooth. Let stand 20 minutes till foamy and doubled in size.
- 2. Add the remaining 1 1/2 cups warm water, 2 tablespoons brown sugar, oil, and salt to yeast mixture; beat till smooth. Beat in nine-grain cereal, chia, and flax. Beat in 2 cups of the bread flour. Stir in the remaining bread flour 1/2 cup at a time.
- 3. Knead with an electric mixer for 10-12 minutes.
- 4. Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of the dough. Cover and let rise in a warm place till nearly doubled in size (about 1 hour).
- 5. Punch dough down. Turn out onto a lightly floured surface. Knead 4 or 5 times. Divide in half. Shape each portion into a loaf by patting/rolling. Place in two greased 9x5x3-inch loaf pans. Cover and let rise in a warm place till nearly doubled in size (30-45 minutes).
- 6. Bake in a 375F oven for 35-40 minutes or until the bread sounds hollow when you tap the top with your fingers. Immediately remove to wire racks; cool. Enjoy!
