Salmon Two Ways
- 4 x 6oz pieces of salmon filet - skin & bones removed (your fish market will be happy to do this for you)
- 1 cup chopped fresh herbs...such as fresh tarragon, baby dill, basil, Italian parsley, even celery leaves are a good choice
- Salt and Freshly ground black pepper, to taste
- Lemon wedges for garnish.
- Preheat oven to 450 degrees.
- 1)trepare 4 large pieces of heavy duty cooking foil.
- 2)tn the center of each piece of foil sprinkle 1/4 cup of the chopped mixed fresh herbs. Place a Salmon filet on top of the herbs giving each filet a grind or two of fresh black pepper. Bring up sides of foil to tightly crimp all edges of foil together and totally enclose the fish. Repeat for each Salmon filet.
- 3)tlace Salmon packets on middle rack of preheated oven and bake for
- 20 minutes. After 20 minutes remove packs. Immediately turn your oven to BROIL and place oven rack 5 to 6 inches away from broiler.
- 4)tpen foil packs -- folding back the sides of the foil to form a shallow little pan for the fish. Return salmon packs to broiler and broil for 5 minutes or until a golden crust has formed on top of each filet.
- 5)temove salmon filets to serving platter or individual plates with spatula and garnish with lemon wedges.
- Serve with Rosemary roasted new potatoes, steamed Asparagus, or Broccoli.
