Double Choc Cheesecake
- crust :
- 18 choc wafer cookies broken
- 1 cup peacans
- 1/4 cup sugar
- 2oz semisweet choc - chopped
- 1/2 stick butter cut into pieces
- filling :
- 4 1/2 oz unsweet choc chopped
- 28 oz cream cheese
- 1/2 cup sugar
- 5 large eggs
- 1 cup gold brown sugar
- 1tbs corn syrup
- rack in center of oven and preheat to 350Au0b0. Place cookies, pecans, sugar and choc in mixer. chop finely. Add butter and process until moist crumbs form. line pie place.
- filling :
- melt unsweet choc in double boiler stirring. remove from heat and cool. Mix cream cheese with 1/2 cup sugar until fluffy. Add eggs one at a time beat to just incorporate. Add brown sugar and beat to combine. Stir in corn syrup and melted choc. Bake 10 min
