Sausage Ragout
- 1 1/2 lb. sweet Italian sausage
- 1 1/2 lb. hot Italian sausage
- 1/4 c. best-quality olive oil
- 1 large yellow onion, coarsely chopped
- 3 cloves garlic, peeled and minced
- 2 green peppers, stemmed, seeded and coarsely chopped
- 2 sweet red peppers, stemmed, seeded and coarsely chopped
- 8 fresh Italian plum tomatoes, quartered
- 1 c. spicy tomato sauce (best if homemade)
- 1/2 c. red wine
- 1/2 c. minced Italian parsley (plus additional for garnish)
- salt and freshly ground black pepper
- Cut sausages into 1/2-inch slices.
- Heat olive oil in a skillet and add sausage pieces.
- Cook, stirring occasionally, until sausage pieces are well browned.
- Add onion and garlic; cook for another 5 minutes.
