Muffins
- 1/2 cup ground sunflower seeds
- 1/2 cup ground pumpkin seeds
- 1 cup whole wheat flour
- 1 teaspoon cinnamon
- 3 teaspoons baking powder
- 1/2 cup wheat germ
- 6 date rolls (ground)
- 5 tablespoons applesauce
- 1 banana
- 1.5 cups soy milk
- 2 "egg replacer" servings
- 1 to 2 cups fruit of choice
- Preheat oven to 375.
- Grind up the sunflower seeds and 3 dates rolls in a high powered blender. Set aside in a large bowl. Grind up the pumpkin seeds and 3 dates rolls. Add to the bowl. Add the flour, wheat germ, cinnamon, baking powder and egg replacer (powder). Mix well.
- Add the applesauce. Blend banana with soy milk and add. Mix well.
- Mix in whatever fruit (blueberries, strawberries & banana, apple & cinnamon, etc.) you like. Spoon into a muffin pan. Bake for 15 to 20 minutes.
