Banoffee Muffins
- 1 3/4 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. butter
- 3/4 c. sugar
- 2 eggs
- 1/2 c. sour cream or yogurt
- 1 c. mashed ripe bananas (3 large)
- 1 snack size container caramel apple dip
- 3/4 c. toffee bits (such as Skor)
- Combine dry ingredients in bowl to mix.
- Cream butter with sugar, beat in eggs until well combined. Mix in sour cream and bananas, stir well.
- Fold in dry ingredients just until mixed, and stir in 1/2 c. toffee bits.
- Fill greased or lined muffin tins 1/4 full, making indent in center with back of spoon. Drop in a dollop (about 1/2 tsp) of caramel dip, and carefully cover with remaining batter, spreading to cover filling completely. Top each muffin with a sprinkle of remaining toffee bits.
- Bake at 400 20 - 25 minutes till golden brown.
