Cajun Hummus
- 1 red bell pepper
- 1 rib celery
- 1 white onion
- 5 cloves garlic
- 1 T olive oil
- salt and pepper to taste
- 3 cups cooked chickpeas
- 1/4 cup lemon juice
- 2 T tahini
- 1 tsp smoked paprika
- 1/2 tsp ancho chili powder
- 1/4 cup parsley, chopped
- 1 T olive oil
- 1/2 cup warm stock, as needed
- preheat oven to 400F. Jliene pepper, celery and onion and place in a bowl with garlic and oil. Season. spread mixture on a sheet pan, and roast for 20 min. Remove garlic, dice veggies, and set aside.
- In a food processor, combine chickpeas, garlic, lemon juice, tahini, paprika, chili powder and parsley. Process until slighly chunky. Add olive oil and stock. Continue to puree until smooth and creamy. Fold in diced veggies, and season to taste. Place in fridge, and chill for 30 min.
