Coconut And Cherry Granola
- 1/3 cup pecans, coarsely chopped
- A1/4 cup shredded coconut
- 2 tbs slivered almonds
- 1 A1/2 tbs pepitas
- 1-A1/2 tbs sunflower seeds
- A1/2 tsp cinnamon
- 1/8 tsp nutmeg
- pinch of ground all spice
- 1/3 cup raisins
- 2 cups rolled oats
- 2 tbs melted butter, still hot
- 3 tsp organic honey
- 2tsp brown sugar
- 1tsp vanilla extract
- 1.tombine oats, nuts, seeds, coconut and spices in large mixing bowl, set aside.
- 2.thile butter is still warm mix with vanilla, sugar and honey until sugar dissolves and forms a rich syrup
- 3.toor syrup over oat mixture, stir to combine evenly
- 4.tpread the mixture onto a baking tin with rim, ensuring it is evenly spread in a thin layer.
- 5.tlace into preheated oven for 12 minutes
- 6.temove from oven, stir granola to lightly breakup and reveal uncooked oats
- 7.tlaces back in oven for a further 5 min
- 8.temove and let cool.
- 9.terve with yogurt, milk and cherries.
