Black Bottom Cups
- Filling:
- 8 oz. cream cheese
- 1 egg
- 1/3 cup suger
- 1/8 tsp salt
- 1 cup chocolate chips (mini chips for mini muffins)
- 1/4 cup sliced almonds
- sugar for tops
- Batter:
- 1 1/2 cups flour
- 1 cup sugar
- 1/4 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 tbl vinegar
- 1 tsp vanilla
- Mix filling ingredients together except chips. When blended add chips.
- Mix all batter ingredents until moistened the beat on med high speed for about 2 mins.
- To assemble fill paper lined muffin pan 2/3 full with batter. Drop a table spoon of filling mixture top each with sliced almonds and a dusting of sugar.
- Bake at 350 for 30-35 mins. If making mini's adjust time
