Pumpkin Log

  1. Mix together the eggs, pumpkin, sugar and dry ingredients. Pour batter into a sided 10 x 15-inch cookie sheet, which has been well-greased and lined with waxed paper.
  2. Sprinkle batter with nuts.
  3. Bake at 375u0b0 for 15 minutes.
  4. Turn cake onto a powdered sugared tea towel.
  5. Peel off waxed paper.
  6. Roll cake and towel and cool in refrigerator at least one hour.
  7. Unroll cake and towel. Spread cake with filling made by beating together until smooth the cream cheese, vanilla, butter and sugar.
  8. Re-roll.
  9. Chill at least 2 hours before serving.
