Pumpkin Log
- 3 eggs
- 2/3 c. mashed pumpkin
- 1 c. sugar
- 3/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 c. chopped nuts
- powdered sugar
- 8 oz. soft cream cheese
- 3/4 tsp. vanilla
- 2 Tbsp. soft butter
- 1 c. confectioners sugar
- Mix together the eggs, pumpkin, sugar and dry ingredients. Pour batter into a sided 10 x 15-inch cookie sheet, which has been well-greased and lined with waxed paper.
- Sprinkle batter with nuts.
- Bake at 375u0b0 for 15 minutes.
- Turn cake onto a powdered sugared tea towel.
- Peel off waxed paper.
- Roll cake and towel and cool in refrigerator at least one hour.
- Unroll cake and towel. Spread cake with filling made by beating together until smooth the cream cheese, vanilla, butter and sugar.
- Re-roll.
- Chill at least 2 hours before serving.
