No Sugar Pumpkin Oatmeal Muffins
- 3 cups Pumpkin Puree
- 2 Eggs
- 2 teaspoon Vanilla
- 1.5 cup Orange Juice, Low
- 1 tablespoon Ginger, Fresh Minced
- 4 cups Whole Oats, Bob's Red Mill
- 1 cup Coconut, Flaked, Unsweetened
- 1/2 cup Pecan pieces
- 1/2 cup Cranberries, Dried, Low Sugar
- 2 teaspoon Cinnamon
- 1 teaspoons Turmeric
- 2 tablespoons Maple Syrup
- 1 teaspoon Nutmeg, fresh grated
- 1 teaspoons Baking Soda
- 1 teaspoons Baking Powder
- 3/4 teaspoon Salt
- 3 scoops Trutein Protien Powder, pumpkin flavor
- Beat eggs, then add remaining wet ingredients including minced ginger
- Add dry ingredients to the wet ingredients, except pecans and cranberries
- Allow mixture to rest for 30 minutes. Preheat oven to 350 degrees
- Stir in cranberries and pecans so they are evenly distributed through the batter
- Spray non-stick oil in (2) 12 muffin tins, distribute 1/4 batter in each cup
- Bake 30 minutes, rotate muffins half way through baking. Allow to cool, and muffins will easily tumblr out of the tins
