Savory Cod With Tomatoes And Olives
- 1 lb. cod (1/2 lb per person)
- 1/4 c. extra virgin olive oil
- 4 cloves garlic, sliced thinly
- 1 can diced tomatoes (28 oz)
- 1/3 lb pitted cured black olives * see note above
- 1 1/2 t assorted dried herbs such as herbes de provence, thyme, oregano, basil...
- fresh ground pepper to taste
- gently wash fish in cold water, pat dry with paper towels. heat olive oil over medium heat in med/lg. stainless brasier or dutch oven that can be covered and transfered to oven from stove top. add garlic and tomatoes with juice and reduce for 3-4 minutes. stir in olives and herbes. pepper to taste. turn off heat. when ready to place in oven, gently place cod fillets on top of tomato/olive mixture. drizzle top of fish with olive oil. cover and place in oven. bake 12-15 minutes. serve immediately. i like to serve over rice, preferably a nutty brown rice blend.
