Pete'S Perfect Pesto
- 1 cup of extra virgin olive oil
- 4-5 cloves of fresh garlic depending on your love for garlic
- 2-3 cups of basil leaves (stems trimmed off) if you like a stronger basil taste use 3 cups
- 1 cup of heavy cream
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of dried crushed red pepper
- 1/3 - 1/2 cup of grated parmesan cheese
- 1 pound of your favorite pasta cooked.
- In a blender add the olive oil, garlic, and basil; blend and liquefy. If the mixture isn't blending completely add all of the heavy cream slowly. Add the rest of the ingredients except the parmesan cheese and liquefy. Add the parmesan cheese cautiously tasting to make sure it's not too salty; liquefy the pesto mixture. The key note to this recipe is determining the amount of cheese to add because the saltiness may vary amongst different brands/makes of parmesan cheese.
- Add Pesto sauce to your favorite pound of cooked pasta and enjoy!!!
