Chicken Divan

  1. Preheat oven 375 degrees. Remove stems from broccoli. Cook broccoli in microwave in covered dish with small amount of water using "Vegetable" setting. Prepare white sauce and set aside. Heat chicken with 4 Tbl of butter, salt and pepper to taste in oven-safe skillet. Cook a couple of mins on each side, until no raw is visible but not completely cooked. Place chicken aside on plate. Add white sauce and sherry to skillet used to cook chicken. Stir and heat until sherry and chicken cracklins are incorporated. Put white sauce back into saucepan leaving a small amount in the skillet. Place broccoli on bottom of skillet in the sauce. Place chicken on broccoli and spread white sauce on top covering all chicken and broccoli with sauce. Place in 375 degree oven 10-20 mins until very hot and chicken is cooked through.

  3. Warm milk in microwave on "Beverage" setting, twice to ensure it is hot. Melt 4 Tbl butter in saucepan. Stir flour into butter and cook. Stir constantly, stop before flour browns. Lightest tan OK. Add salt and pepper. Add milk and bring to boil. Cook on low heat until sauce starts to thicken (2-8 mins). Set aside.
