Easy Pasta With Spinach And Tomatoes
- Tablespoon butter
- 1/4 cup olive oil
- 1/4 cup yellow onion, diced
- 2 cloves garlic, minced
- 1/4 cup white wine (Sauvignon Blanc is good)
- 2 cups fresh spinach leaves
- 1/2 cup canned diced tomatoes with some juice
- salt and pepper
- Juice of 1/4 of a lemon
- 2 small servings pasta
- 1. Boil water for pasta.
- 2. Melt butter in medium saucepan over medium-high heat, then add olive oil.
- 3. Saute onions until soft and translucent (about 5 minutes. Meanwhile, add pasta to boiling water and cook according to al dente directions if you like your pasta soft(or one minute less if you like your pasta al dente).
- 4. Add garlic, then wine and simmer for a few minutes, stirring occasionally.
- 5. Add salt and pepper and tomatoes.
- 6. Add spinach until wilted and then lemon juice.
- 7. Drain cooked pasta and then add to saucepan and mix with sauce over heat for 1 minute.
