Soda Spiked Stir Fry With Citrus Rice
- 2 cups cola soda pop
- 4-5 drops hot pepper sauce
- 4 cups sliced or cubed meat,
- poultry OR mushrooms
- 1 cup uncooked white rice
- 2 cups lemon-lime soda pop
- 1 teaspoon butter
- Non-Stick Cooking Spray
- 16 oz California Style Veggies
- (from the freezer)
- 4-5 green onions, sliced thin
- including 2" of the tops
- Pour cola into a heavy-duty ziplock style bag - add pepper sauce and meat, chicken or mushrooms. Seal and let stand 30 minutes to allow the flavors to penetrate.
- Place rice, lemon-lime soda and butter in a 6-8 cup non-stick saucepan. Bring to a boil, reduce heat, cover and simmer 15 minutes. (or until liquid is fully absorbed) Reomve from heat and set aside.
- While rice is cooking prepare your stir-fry.
- Drain the marinade from your entree choice. Spray a WOK or large fry pan with non-stick cooking spray and heat on high until a drop of water sprinkled in "dances" around the pan. Add entree all at once and quick cook, stirring constantly 4-5 minutes. Add vegetables all at once and add a large cover to "steam" them slightly for 3 minutes - remove cover and stir-fry until vegetables are crisp-tender.
- To Serve: Spoon rice onto serving platter - Spoon stir fry over the top and add green onions.
