Oatmeal Raisin Cookies
- 2 eggs
- 1 c. raisins
- 2 tsp. vanilla
- 1 c. margarine
- 4 tsp. liquid sweetener or 8 Tbsp. brown Sugar Twin
- 1 1/3 c. self-rising flour
- 1 tsp. salt
- 1/4 tsp. nutmeg
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 3 c. quick cooking oatmeal
- Beat eggs.
- Add vanilla and raisins to the eggs (set aside for 1 hour).
- Cream margarine and artificial sweetener.
- Add to egg, vanilla and raisin mixture.
- Sift flour with salt, nutmeg, baking soda, cinnamon and cloves.
- Add this mixture to the other mixture and stir well.
- Add oatmeal.
- Drop by teaspoon onto well-greased cookie sheet.
- Bake at 350u0b0 for about 10 minutes.
- Don't overbake. Yield: 5 dozen.
