Pasta Tutto Mare(All Sea)
- 8 Tbsp. olive oil
- 3 cloves garlic
- 1 Tbsp. chopped parsley
- pinch of rosemary
- 8 littleneck or top of neck clams
- 1 (7 oz.) can minced clams with juice
- 8 mussels
- 12 shrimp, peeled and cut in small pieces
- 8 calamari (small squid), cut in small pieces
- 6 oysters out of shell
- 1 (7 oz.) can scungilli (conch), if available
- 3/4 c. scallops
- 4 Tbsp. lemon juice
- salt and pepper to taste
- 2 lb. angel hair pasta or linguini
- Heat oil in saucepan and add garlic and rosemary.
- Cook until brown.
- Remove browned garlic and rosemary.
- Add all seafood, parsley and lemon juice.
- Simmer for 7 minutes.
- Do not overcook. Cook pasta al dente and drain.
- Tos with half of seafood sauce and spoon the remainder over separate portions before they are served. Serves 8 to 10.
