Sesame Sauce For Dandan Noodles
- 3 or 4 cloves garlic, minced
- 1 T minced fresh ginger
- 1/4 cup sesame paste
- 3 T soy sauce
- 1/4 cup minced fresh cilantro
- 1 T dark brown sugar
- 1/2 t chile paste
- 2 t Chinese black vinegar
- A grinding of Szechuan pepper
- 1/2 cup chicken broth
- 1 T toasted sesame seeds
- Put all ingredients for the sauce except the chicken broth and sesame seeds into a food processor fitted with the steel blade. Pulsing, blend the mixturen into a sauce the thickness of light cream, thinning it with the chicken broth unitl it reaches the desired consistency. Remove from the processor and stir in the sesame seeds. Let this sauce sit for at least 15 minutes to allow the flavors to mingle.
