Western Casserole
- 1 large onion
- 1 large green or red pepper
- 1/2 cup celery
- 2 garlic cloves
- 1 lb lean ground beef
- l 1arge can tomato juice
- 2 and 1/2cups medium egg noodles
- 1/4 cup chili powder (or to taste)
- 1/2 pkg of frozen corn
- Cheddar cheese - enough to cover the tops of 2 casserole dishes
- Brown ground beef with onion, green or red pepper, celery and garlic.
- Add can of tomato juice (you may need to add some water if seems too thick).
- Add egg noodles and cook on medium until almost soft but not mushy. (Look at pkg to tell you the amount of time).
- Add chili powder and frozen corn.
- Mix well and cook for 3 minutes.
- Spray 2 casserole dishes with cooking spray.
- Divide the contents of the pot between the two dishes.
- Cover with cheddar cheese slices.
- Cook, uncovered, in 350 degree oven for 30 minutes.
