Summer Fruit Salad

  1. place spinach in a large salad bowl
  2. add 1/2 to full jar of tropic fruit
  3. add grape tomatoes (halve if pieces are too big)
  4. add red onion slices
  5. crumble the chevre into the salad
  6. toss the salad gently (add your favorite dressing--if preferred, take reserved liquid from fruit and combine with champagne vinegar and good quality olive oil to make a tasty viniagrette)
  7. sprinkle toasted coconut on top of salad
