Green Gazpacho
- 1 cup green grapes
- 1 ripe avocado, pitted and peeled
- 3/4 cup peeled and coarsely chopped cucumber (i used hothouse)
- 1/2 cup green bell pepper
- 1/2 cup chopped celery
- 1/2 cup chopped green onions (scallions)
- 1 1/2 cups white grape juice
- 1 tbsp fresh lime juice
- 2 tbsp chopped fresh mint leaves
- salt and pepper to taste
- Puree the fruit and vegetables in small batches in food processor, adding grape juice as needed to keep blade from clogging. (I did in two batches and did not need the juice). Do not puree completely . . . leave in small pieces. It should be chunky. Transfer to large mixing bowl and add grape juice, lime juice, mint and salt and pepper. Cover and chill for at least four hours (I did it overnight).
