Apple Banana Nut Bread
- 1/2 c. applesauce
- 1/2 c. sugar
- 1/4 c. plain nonfat yogurt
- 1 tsp. vanilla
- 3 egg whites
- 2 c. all-purpose flour
- 1/2 tsp. salt
- 1 tsp. soda
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 c. chopped pecans
- 1 c. chopped, peeled apples
- 1 c. ripe bananas, mashed
- Preheat oven to 350u0b0.
- In a large bowl, cream applesauce and sugar.
- In a separate bowl, mix yogurt and vanilla.
- Add egg whites and beat thoroughly.
- Add mixture to applesauce and sugar; mix well.
- Sift together flour, salt, baking powder, cinnamon and nutmeg.
- Combine dry ingredients; mix until well blended.
- Add fruit and nuts; mix well.
- Pour into well-greased and floured 9 x 5-inch loaf pan.
- Bake at 350u0b0 for 1 hour.
- Yields 1 loaf (16 slices).
