Sauerkraut Soup
- 1.5lbs. Small red potatoes.
- 3/4 lb. Baby carrots.
- 1 Large yellow onion.
- 1 lb. Sauerkraut (prefer glass jar kraut)
- 1 lb. Light sour cream.
- 1/2 lb. Plain yogurt.
- 6 cups Vegetable stock or water. (add less for thicker consistency)
- 1.5 lb. Kielbasa, pre-cooked (or other pre-cooked Brat/Kielbasa)
- Wash and large chop potatoes. Boil in separate large pot until desired tenderness, then strain.
- Boil, strain, and blanche baby carrots in a small pot.
- Medium chop and sweat onion in small pan or sauce pot.
- Pre-mix yogurt and sour cream in a medium bowl.
- Medium-thin slice Kielbasa.
- In a large pot add yogurt/sour cream, sauerkraut and stock/water. Stir contiously. Bring ingredients to a simmer. Add all remaining ingredients and heat over meduim heat until hot.
- Feel free to add other vegetables for texture and color.
- Serve hot in bowls.
