Sauerkraut Soup

  1. Wash and large chop potatoes. Boil in separate large pot until desired tenderness, then strain.
  2. Boil, strain, and blanche baby carrots in a small pot.
  3. Medium chop and sweat onion in small pan or sauce pot.
  4. Pre-mix yogurt and sour cream in a medium bowl.
  5. Medium-thin slice Kielbasa.
  6. In a large pot add yogurt/sour cream, sauerkraut and stock/water. Stir contiously. Bring ingredients to a simmer. Add all remaining ingredients and heat over meduim heat until hot.
  7. Feel free to add other vegetables for texture and color.
  8. Serve hot in bowls.
