Seasoned Cranberry Meat Loaf
- 1tbsp. olive or veg. oil
- 1 c. diced green pepper
- 1/2 c. diced onion
- 2 lbs. ground beef
- 1 lb. ground turkey or chicken
- 1 16 oz. can whole berry cranberry sauce (reserve one cup)
- 1 c. seasoned bread crumbs
- 2 tbsp. dijon mustard
- 1 egg, beaten
- 1 tsp. black pepper
- 1 tsp. salt
- dash marjoram
- Preheat oven to 350 degrees.
- Heat oil in medium nonstick saucepan over medium heat. Add green pepper and onion. Cook until tender and translucent. Set aside.
- Combine green pepper, onion, beef, turkey or chicken, cranberry sauce (reserving 1 cup), bread crumbs, mustard, egg, pepper, salt and marjoram.
- Mix well, using clean hands. Place in a loaf pan. Top with reserved cranberry sauce. Bake 1 hour.
