Ground Meat And Cheese Lasagne
- FOR THE MEAT SAUCE
- 3 tablespoons olive oil
- 1 big onion, chopped
- 1 green bell pepper chopped
- 1 big carrot grated
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 2 16 ounce can roma tomatoes, drained and chopped (save the liquid)
- 5 garlic cloves finely chopped
- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 pound ground veal
- 1/4 teaspoon ground nutmeg
- salt and pepper to taste
- FOR THE CHEESE SAUCE
- 1 6 ounce cream cheese
- 2 eggs
- 1/2 cup milk
- 2 tablespoons ground parmesan cheese
- dash of ground nutmeg
- salt and pepper to taste
- FOR ASSEMBLING
- 1/2 pound of mozzarella cheese
- 1 pound of lasagne noodles (oven ready)
- Parmesan cheese for topping
- PREPARE THE SAUCE
- In a 6-quart heavy pot,heat the oil and add the onion,cook stirring until golden, about 4 minutes, add the bell pepper and cook for 3 more minutes, add the garlic and cook for one more minute, add meats and cook stirring and breaking up the larger pieces, until it is no longer pink. Add the tomato paste and cook until changes color to dark red. Add the tomatoes with its liquid, salt pepper and nutmeg and simmer, stirring occasionally, until sauce is thickened, about 45 minutes. Cool it down.
- PREPARE THE CHEESE SAUCE
- Put all the ingredients in the blender of food processor and mix until is well combined.
- ASSEMBLE THE LASAGNA
- Preheat the oven to 375u0b0F. Oil 2 13-by-9 baking dish or pyrex.
- (Assembly both dishes at the same time)
- Spread 1 cup or the meat sauce in baking dish,spread with the cheese sauce and cover it with lasagne noodles,do another layer like this, (the first two layers have to be thin with the sauces) for the third layer, put half of meat sauce in each dish and cover with half of the cheese sauce. After that top it the mozzarella. . Bake cover with buttered foil for about 45 minutes. Remove foil
- and sprinkle parmesan over the lasagne and bake until it is golden and bubbling. (about 15 more minutes)
