Kielbasa, Apple And Rye Bread Stuffing
- 12 slices light rye bread
- 1 lb. smoked kielbasa
- 2 onions
- 2 celery ribs
- 1 large garlic clove
- 1 stick unsalted butter
- 2 granny smith apples
- 1 cup flat parsley leaves
- 2 cups chicken broth
- Cut bread into 1/2" cubes and toast in one layer until golden (approx. 10-15 minutes).
- Quarter kielbasa lengthwise and cut crosswise into 1/4" pieces. Chop onions and celery. Mince garlic. Brown kielbasa over medium heat. Transfer to paper towels using a slotted spoon.
- To skillet, add 6 tablespoons of butter and cook onions, celery and garlic stirring occasionally until celery is crisp tender. Finely chop apples and stir into mixture. Cook until apple is softened.
- Mince parsley. In large bowl, toss bread, kielbasa, veggie mix, parsley, broth and salt and pepper to taste. Transfer to a buttered baking dish. Dot stuffing with remaining butter and back uncovered until golden at 375 degrees for 30 minutes.
