Healthy Waldorf Salad

  1. 1. Boil chicken breasts for 20 min. or until no longer pink.
  2. 2. While chicken is boiling, chop apple and celery.
  3. 3. Drain chicken, blot dry and chop into bite sized pieces.
  4. 4. Mix all ingredients, add avocado mayo and salt.
  5. Avocado Mayo
  6. 1. Put all but oil in a blender or food processor and pulse until combined.
  7. 2. While processor or blender is running, slowly drizzle in the oil in a thin, yarn-thick stream. Continue until all of the oil has been combined and the mayo is dense and creamy.
  8. Note: Can be stored, covered, in the refrigerator for up to 2 weeks.
