Farfalle Thyme Shrimp
- 500 grams Farfalle (Bow Tie)
- 1/2c. Lime Juice
- 8 large cloves of garlic
- dried chili peppers (2) cut into tiny pieces or you could use Cayenne.
- 30 medium shrimp
- 20 cherry tomatoes, peeled
- teaspoon of sugar
- olive oil 2 tbsp.
- Thyme to taste
- salt
- 3/4 cup Parmesan cheese grated
- Chop finely the garlic and add it to the shrimp which are soaking in lime juice and the finely cut up chili peppers.
- High heat for the frying pan. Cook the shrimp for about
- 2 mins, if too long they become rubbery.
- Once cooked pour the shrimp and lime juice into a bowl and let sit.
- While the Farfalle boils - 13 minutes. Peel the par boiled cherry tomatoes and cut in half keep ready in a bowl. Sprinkle one teaspoon of sugar directly onto the tomatoes.
- Drain well the Farfalle and place into a large bowl.
- Pour the shrimp, chili and lime juice into the Farfalle, follow with Thyme (I used about 2 tablespoons). Add the sugared cherry tomatoes and Parmesan cheese to suit your taste.
- If the mixture looks to dry...I added another couple of tablespoons of olive oil over the whole shebang, salt to taste...and voila. Enjoy
