West Indies Grilled Chicken Salad

  1. Make dressing by mixing first five ingredients in food processor until smooth. Set aside. Mix ground ginger, turmeric and cayenne and sprinkle over chicken breasts. Place chicken on hot grill; grill five minutes per side (total cooking time 10 minutes). Thinly slice chicken breasts. Mix dressing with lettuce, cilantro, pineapple and oranges. Place sliced chicken on top.
