West Indies Grilled Chicken Salad
- 1/4 tsp. fresh ginger, minced
- 1/4 cup honey mustard
- 1/2 cup mayonnaise
- 1/4 cup lime marmalade
- 1 tbsp. sesame oil
- 2 boneless, skinless chicken breasts
- 1/4 tsp. ground ginger
- 1/4 tsp. ground turmeric
- 1/4 tsp. cayenne
- 8 oz. pineapple chunks
- 8 oz. mandarin oranges
- 1/2 cup cilantro, chopped
- 3 cups green leaf lettuce, torn
- Make dressing by mixing first five ingredients in food processor until smooth. Set aside. Mix ground ginger, turmeric and cayenne and sprinkle over chicken breasts. Place chicken on hot grill; grill five minutes per side (total cooking time 10 minutes). Thinly slice chicken breasts. Mix dressing with lettuce, cilantro, pineapple and oranges. Place sliced chicken on top.
