Char-Gar Potato Salad
- 3 yukon gold potatoes
- 1/4 c olive oil
- 1 small onion cut in half
- 1/2 yellow pepper
- 1/2 red pepper
- 1 small zucchini cut in half length wise
- 1 small fennel bulb,split
- 1 bulb of garlic cut in half lengthwise
- 1 tbsp capers
- 1 tsp lemon zest
- 1 Tbsp fresh minced parsley
- 1/3 c. olive oil
- 3 Tbsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1.Boil potatoes in their jackets and cook until tender. cool,peel and cube.
- 2.Toss onion,peppers zucchini,fennel and garlic in olive oil, season with salt and pepper and cook on a hot grill for @ 2 min on each side.
- 3.Pop the garlic and chop the rest of the vegetables. Add potatoes, capers oil,vinegar and lemon zest.
- 4.Adjust seasoning and garnish with parsley.
