Char-Gar Potato Salad

  1. 1.Boil potatoes in their jackets and cook until tender. cool,peel and cube.
  2. 2.Toss onion,peppers zucchini,fennel and garlic in olive oil, season with salt and pepper and cook on a hot grill for @ 2 min on each side.
  3. 3.Pop the garlic and chop the rest of the vegetables. Add potatoes, capers oil,vinegar and lemon zest.
  4. 4.Adjust seasoning and garnish with parsley.
