Pepper Steak Stir-Fry
- 1 bag Uncle Ben's boil in a bag rice (family size)
- 1 Tbsp. margarine
- 3/4 lb. beef top sirloin, cut in thin strips
- 1 tsp. minced garlic
- 1 c. fresh sliced mushrooms
- 2 c. thin pepper slices
- 1/4 c. beef broth or bouillon
- 1/2 tsp. ground pepper
- 1/2 tsp. salt
- 1/4 c. sliced green onions (with tops)
- Cook rice according to package directions.
- While rice is cooking, melt butter in 10-inch skillet over medium-high heat. Add beef and garlic.
- Cook and stir 2 minutes; push to one side. Add mushrooms.
- Cook and stir 1 minute.
- Add pepper strips, broth, pepper and salt.
- Cook and stir until peppers are crisp-tender, about 2 minutes.
- Stir in green onions.
- Serve over hot, cooked rice.
- Serves 2 to 4.
