Kaspar Caviar
- 2 cans black beans
- 1 can shoe peg corn 1 can navy beans
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 3 green onions (scallions), chopped
- Fresh cilantro, chopped
- 2 or 3 limes, for juice
- 2/3 cup apple cider vinegar (do not substitute)
- 2/3 cup light olive oil (not evoo)
- 1/4 cup sugar
- 2 garlic cloves, minced
- 1 large bag tortilla chips (rounded scoop shaped)
- Mix together vinegar, oil, sugar, lime, & garlic.
- Drain and rinse beans & corn; add to mixture.
- Add chopped veggies and cilantro and mix well.
- Let sit overnight; liquid may gel up.
- Stir & drain liquid before serving.
- Reserve liquid in case you don't eat all of it.
- Also tastes good when you add chopped tomatoes the day of serving.
- Serve with scoop shaped tortilla chips.
