Nanaimo Bars
- Base
- 1/2 c butter
- 5 tbsp white sugar
- 5 tbsp cocoa
- 1/2 tsp vanilla
- 1 egg
- 2c graham waf crumbs
- 1c coconut
- 1/2 c chopped walnuts
- Icing
- 4tbsp butter
- 2tbsp milk
- 2tbsp vanilla custard powder (birds)
- 2 c sifted icing sugar
- Topping
- 2 sq semi sweet chocolate (2oz) (I triple topping for double recipe)
- 1tbsp butter
- Base
- Place softened butter, sugar, cocoa, vanilla and egg in a bowl in pan of boiling water. Stir until he consistency of custard. Mix wafer crumbs, coconut, nuts together, add to cocoa mix. Pack into untreated (line with parchment) 9" square cake pan and top with icingx
- Icing
- Cream butter, combine custard powder and milk, add to butter. Mix in 2 c sifted icing sugar. Spread over chocolate base and allow to harden
- Topping
- Top with 2 sq semi sweet chocolate (2oz) melted with 1 tbsp butter, spread evenly and refrigerate
