Pulled Pork Sandwiches
- 1 Pork Loin or Roast (about 2-3 lbs.)
- 1 - 2 Small Bottles of Barbecue Sauce (my family likes "Sweet Baby Ray's", Hickory & Brown Sugar)
- 1 Cup Water (Use a 1/4 cup less for smaller piece of meat)
- 1/2 Cup Brown Sugar
- Potato Rolls (Hamburger or Hot Dog)
- Condiments to taste - Sliced Onion, Sliced Pickles, Lettuce, Sliced Jalapeno Peppers, etc.
- Slice the meat into 4 equal sections.
- Place water, 1 bottle of barbecue sauce & sugar into a large pot. Stir to combine.
- Add meat & simmer (covered) for about an hour on med/low heat until meat starts to fall apart.
- Once meat is very tender & separates easily, take each piece out of the pot & use 2 forks to pull the meat into shreds. Place shredded meat back into pot. Repeat until all meat is shredded. Cook down (uncovered) until sauce is thickened.
- (about 20 - 30 minutes). For bolder flavor or saucier sandwiches, add more barbecue sauce to taste.
- You can serve it at this point on rolls with condiments, or refrigerate it until you are ready to pack it up to go to the game.
