Ranch Casserole
- 4 or 5 cooked chicken breasts or equivalent amount of turkey breast
- 12 flour or 14 corn tortillas, cut in strips
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 onion, finely chopped
- 1 c. milk
- 1 1/4 c. green chili salsa
- 1/2 lb. grated Cheddar cheese
- 1/2 lb. grated Monterey Jack cheese
- Cut chicken
- or
- turkey
- in
- bite
- size pieces and cook until done.
- Cool.
- Mix soups, onion, milk and salsa together. Place 1/2 of
- tortillas
- on bottom of 9 x 13-inch pan.
- Cover with 1/2
- of meat and 1/2 of sauce and cheese.
- Repeat layers; cover with remaining
- cheese.
- Bake
- at 300u0b0 for 1 1/2 hours. Best if made the night before.
