Black Bean Thai Tacos

- 4 servings
- 8 Corn Tortillas
- Cooking Spray
- (2) 12" pieces aluminum foil - 3 sides folded together to make a pouch
- 1 14.5 can black beans - drained
- 4 T Thai Peanut Satay Sauce (I like Trader Joe's Peanut Satay Sauce)
- 1 t fresh lime juice
- 2 t chili garlic sauce
- 1 avocado peeled and diced
- 2 green onions diced
- 4 T crumbled goat cheese
- 1/4 chopped cilantro
- To prepare tortillas:
- Preheat oven to Broil. Set rack to 2nd level from top.
- Lay out tortillas on cookie sheet. Lightly spray with cooking spray. Cook for 1 minute. Turn tortillas and spray again. Cook additional minute. Take out of oven and put tortillas in pouch. Turn off oven. Seal pouch and put in oven to keep warm.
- Mix beans, peanut sauce, lime juice and chili garlic sauce in bowl. Mix well. Microwave on high for 2 minutes or until heated through.
- Take tortillas from pouch and place on 4 plates.
- Divide bean mixture (approx 1/4 cup beans) in each tortilla. Top equally with cheese, avocado, cilantro and green onions.
- Enjoy!
