Broccoli Bake
- 1 1/2 cup minute rice
- 1 med onion, chopped
- 1/2 cup sliced celery
- 1 can cream of celery soup
- 2 packages chopped broccoli
- 1 1/3 cup milk
- 1 cup velvetta cheese
- 1/8 tsp pepper
- 1/4 tsp salt
- Bring to a boil 1 1/2 cups of water. Add 1 1/2 cup of Minute rice. Set aside for 5 minutes. Brown 1 medium onion, chopped and 1/2 cup sliced celery in 2 tsp melted butter. Add to the steamed rice. Stir in 1 can of undiluted cream of celery soup. In another sauce pan bring to a boil the 2 packages of broccoli and water. Drain well. Add 1 1/3 cups of milk and 1 cup of velveeta cheese,cut into small pieces. Heat until cheese is melted. Stir the broccoli-cheese mixture into the rice mixture. Add the salt and pepper. Pour into a 13x9 inch glass pan and bake at 325 degree for about 1 hour.
